Well, first of all this post is dedicated to my new vegetarian roommate!
Alright! Of course mac and cheese needs to start with your choice of delicious pasta boiling away in salted water with a few tablespoons of olive oil
Unlike all mac and cheese this version will be loaded with mushrooms and garlic-chili hot sauce
Also a stick of butter, some pink sea salt and some fresh ground pepper and olive oil
Sauteed all that for a few minutes until the mushrooms were golden brown
Next I drained the pasta and poured it into the mushroom stuff
Then I forgot to take a picture of my cheese mixture.. doh!
In a mixing bowl I combined a cup of shredded sharp cheddar, 1/4 cup jack, a quarter cup romano, 2 tablespooons yellow mustard, 1 tablespoon minced garlic, and 1/2 cup sour cream
I crumbled the cheese mixture on top of the noodles and mushrooms and poured about a half a cup of milk over top
Simmered on low until the mixture was just melty
Ate mine with a little extra hot sauce 🙂
