Finally the Tuesday night Rec dinners begin again 🙂
I decided to go with something simple since most people were already swamped with school
The tacos themselves are pretty standard, but the meat and lettuce are a bit unique
1 pound of ground beef was sauteed with 5 roughly chopped cloves of garlic, 1/3 cup minced red onion, and a few tablespoons of Penskeys Spices Taco Seasoning
After the seasonings were mixed in I added a few drops of liquid smoke, a few shakes of Worcestershire sauce, and a generous pour of olive oil
Once the meat was cooked I added about a cup of peperoncini
juice, a tablespoon of garlic chili sauce, a few shakes of Tapatio, and some Cholula, and a 1/4 cup orange juice
Simmered that for about 30 minutes on very low heat until the meat had absorbed most of the sauce
Instead of serving the tacos with sour cream and hot sauce on the side I finely chopped the lettuce and tossed it with a 1/4 cup sour cream and 1/3 cup Cholula
Served hard and soft shell tacos with the meat, sharp cheddar, lettuce, diced tomatoes, and minced white onions, topped with salsa
