This is an unusual fruit salad with a citrus mint sauce.
This fruit salad consisted of 1 diced apple, 1 large orange peeled and diced, 1/2 cup of crushed pineapple, a handful of marshmallows (I know marshmallows aren’t for everyone, but my grandma put them in her fruit salad and I like them), walnuts, dried cranberries, a tablespoon of finely minced fresh mint leaves, a teaspoon of granulated sugar and a teaspoon of powdered sugar. I mixed the ingredients gently for a few minutes to turn some of the juices into a flavorful syrup.
The citrus and mint made the salad bright and refreshing while the dried cranberries and walnuts gave it a heartier flavor. I served it as a dessert but it would make a great breakfast or snack as well. It would be good with yogurt, ice-cream, or whipped cream.
